Ludlow hotel proprietor wins award

Started in 1986 to recognise the top 30 hospitality figures under the age of 30, an Acorn Award was presented today to young entrepreneur and owner of Fishmore Hall, Laura Penman and head chef at La Becasse, Will Holland.  

Laura, 29, purchased the handsome Regency property in 2007 and restored it from its derelict state to create a beautiful boutique hotel, Fishmore Hall. The property had been neglected and left to deteriorate before a 22 week refurbishment converted the property into a luxury 15 bedroom hotel.

With Executive Head Chef Marc Hardiman and Head Chef David Jaram running the kitchen, the hotel was awarded two rosettes, within ten days of the opening, and offers the best of Shropshire dining.

 Laura started her career in the hospitality industry at an early age. She has worked in some of the UK's most highly regarded hotels such as Cotswold House, progressing to the position of general manager at The Noel Arms in Chipping Campden before becoming the owner and director of Fishmore Hall in Ludlow.

Will Holland, 29, head chef at La Becasse has been winning awards since its opening in January 2003, receiving a Michelin star after just eighteen months. Building on his life- long passion for cooking and the finest seasonal, ingredients, Chef Will Holland and his brigade work closely with local suppliers and producers, and wherever possible use produce that is local to Ludlow.

The prestigious award recognises Laura and Will as the future of hospitality and recognises Ludlow as a hotspot for top professionals in the food industry. In the past, the Acorn has identified key players in the industry including Marco Pierre White, Gary Rhodes and Michael Caines.
